Stuffed Summer Squash With Shrimp & Rice Pilaf | Soy Free | Gluten Free | Sugar Free 

Ingredients:

  • 4 Summer Squash Split in half and carved out

  • 1 whole lemon

  • Sea salt to taste

  • Black pepper to taste

  • 1 cup cooked shrimps chopped small

  • Paprika

  • 1/2 cup precooked white rice

  • 1/2 of red bell pepper chopped fine

  • 1/2 of white onion chopped fine

  • 2-3 garlic cloves chopped fine

  • 2-3 tablespoons nutritional yeast

  • Oil of your choosing

  • 2-3 tablespoons parmesan cheese (not powdered)

  • Hot sauce of your choosing

Directions:

Heat your oven to 375 degrees. Place your craved out squash onto a cookie sheet and squeeze half of your lemon on top with some salt and pepper. Once your oven is heated place your squash uncovered in the oven for 15 minutes.

While your squash is cooking, add a little oil to a pan and place a medium heat on the stove. Next add your shrimp with some salt, pepper & paprika. Cook well. Once cooked take out of the pan and chopped into small pieces. Set aside.

Next add a little more oil to your pan and on medium heat cook your onions, garlic, peppers, nutritional yeast and the other half of your lemon. Add sea salt to taste. Once that is cooked well, add in your cooked rice and stir to mix well. Finally add in the shrimp. Mix together well and set aside. 

Take the squash out of the oven and add your mix to the squash. Cover with tin foil and cook in the oven for another 30 minutes. Take it out and top it with your Parmesan and broil on high uncovered for 3-5 minutes more until it is lightly browned. Let cool and enjoy with your favorite hot sauce.
