Black Bean Herb Tortillas

Low Histamine - Low Fat - Vegan - Nut Free - Soy Free - Gluten Free - Corn Free 

Ingredients

  • 1 3/4 cup warm water

  • 1 cup homemade black bean flour (blend whole beans in a high speed mixer’s dry container)

  • 1/2 cup homemade gluten free oat flour (blend oats in a high speed mixer’s dry container)

  • 1/2 cup yucca flour (tapioca flour) 

  • 2 teaspoons sea salt

  • 4 tablespoons homemade Low Histamine Pesto 

Directions:

Heat a pancake griddle to 400 degrees and spray with coconut oil. Once hot add all of the above ingredients to a high speed blender and blend until smooth. Next pour two 1/3 cup portion sizes of the batter onto the griddle and spread the batter with the butt of a spoon to make it the size of a tortilla. Once one side is cooked flipped the tortillas and cook the other side until slightly brown. Continue with this process until you finish all of the batter. Separate the tortillas with wax paper so they don’t stick together and place covered in the fridge for up to 4 days. These are great to use for burritos or wraps and they bend without breaking. Enjoy.
